Turkey 1 whole
Kosher salt 2 cups
Butter ½ cup
Onion 2 whole
Carrot 4 whole
Celery 4 stalks
Basil 2 springs
Bay leaf 1 whole
Rice vinegar 1 cup

1Rub the turkey inside and out with kosher salt and place it into a pot with cold water. Cover the pot and refrigerate it overnight allowing it to soak in the salt water mixture.
2/ Preheat oven to 175 degrees. Rinse the turkey thoroughly and discard the brine mixture.
3/ Melt butter in a saucepan over medium-low heat. Remove it from the heat when it’s three-quarters melted, then stir until completely melted.
4/ Chop the carrots, celery and onions into small pieces.
5/ Brush the turkey with 1/4 cup melted butter. Place the turkey on a roasting rack in a shallow roasting pan. Stuff the turkey with 1 onion, 1/2 the celery, 1/2 the carrots, 1 sprig of basil, and the bay leaf. Scatter the remaining vegetables and basil around the bottom of the roasting pan, and cover with the rice vinegar.
6/ Roast uncovered for 4 hours in the preheated oven. Carefully turn the turkey breast side up about 2/3 through the roasting time, and brush with the remaining 1/4 cup butter. Allow the turkey to rest for 30 minutes before carving to prevent the turkey from drying out and losing its flavor.
