Laminated Dough Series (Croissant & Chicken Pie)

Laminated dough is a culinary preparation consisting of many thin layers of dough separated by butter, produced by repeated folding and rolling. There can be as many as 80 layers in a single pastry! Peel the layers off these savoury delights as you recreate them from scratch. What’s more, bring home your own creations for sharing!

In this session, we’ll be creating what’s perhaps the most well-known French pastry, a croissant on top of a classic chicken pie. Find out what goes into a chicken pie filling and how it would differ from other chicken dishes thanks to the laminated dough that’ll be encasing it.

Thai Style Lava Bread – Pandan Matcha & Salted Egg

This Thai twist on molten lava bread mixes flavours we all know and love for an irresistible bake! Luxuriate in the warm, rich flavoured lava spilling from freshly baked bread that only intensifies the natural fragrance of the baked bread. In this session, we will be whipping up 2 variations from scratch:

  • Thai Style Lava Bread – Pandan Matcha
  • Thai Style Lava Bread – Salted Egg
Pandan Matcha perfectly balances the sweet fragrance of Pandan and the sharp tangy bite of Matcha for a delectable treat. 

For those who prefer more savoury flavours, Salted Egg is the perfect option – who could resist this addictive taste!

Chef Profile
Pastry Chef Charlynn Gwee is an enterprising chef who decided to pursue her love and passion for baking right after graduating with a business degree. She has since been working as a pastry chef and chef instructor, specializing in French pastry, viennoiseries as well as asian bakes.
She conducts both classes and consultations overseas as well as locally.
Being the ambassador of KitchenAid has allowed her to do what she loves, meeting people from all walks of life and speaking about food.
She works with various brands on R&D projects, developing new recipes for companies. Her recent collaboration with President, Galbani and QBB (to name a few), has shown the many possible ways of working with various products and how versatile ingredients can be.
